Grilled Vegetable Pitas
Ingredients:
1 eggplant (about 1 pound), cut into 1/2-inch-thick slices...
1 large portabello mushroom (5 to 6 ounces)...
1 small red bell pepper, quartered ...
1 small yellow or green bell pepper, quartered...
2 (1/4-inch) slices large red onion...
1/2 cup low-fat Italian or honey-dijon salad dressing, divided...
4 ounces reduced-fat shredded Italian cheese blend...
4 (8-inch) whole wheat or white pita breads...
Instructions:
Brush both sides of eggplant slices, mushroom, bell pepper quarters and onion slices with 1/3 cup dressing. Grill over medium coals or broil 4 to 5 inches from heat source 4 to 5 minutes per side or until vegetables are crisp-tender. Cut into bite-size pieces. Toss with additional dressing.....
Cut pita breads in half; open pockets and fill with vegetable mixture. Top with cheese.....

Today was fun! I went to Hilary's house with Hanna and Erika and we watched Lord of the Rings, sorta. Hanna kept yellling at me to shut up and Erika tried to get Austin Powers to marry her. (dont ask). And we talked to someone else too wink wink Hanna. HAHAHA. The cat alarm clock is the best! K, people think Frodo is hot and I do except in the movie HE LOOKS LIKE A GIRL!! I am sorry but he does! (hopefully he isn't reading this, I would be scared if her was) Anyway it is so much fun hanging out with a bunch of spazes!! Friends are great!

I went rafting with my church today it was great! It is so much fun to sit on the front and "ride the bull" and I was on the front when we went over this really big rapid and I almost fell off but I didn't, but then some people pushed me off it was fun though even though the water was freezing. And we stopped at this rock you could jump off into the freezing water I wasn't going to do it but everyone else did so I did. The woman we were with in our boat(Mrs. Capson hehe) jumped off and we all cheered it was fun!!:-D On the way home we were in the car with some of the guys and they started bouncing the van it was funny! Tomorrow I'm going camping 'til Saturday and I think we could go rafting again. YAH!

why'd you name her if that was your big plan ~Pond This is a sad song about people sending dogs of into to space. They are soo mean! They know the dog won't be able to come back down, poor Laika. Laika was launched aboard Sputnik 2 on November 3, 1957 by the Soviet Union. She was the first living creature in space. There was no way to return Laika to earth so she died in space about a week after the launch.(When i found this out i felt like crying POOR LAIKA!):'-( The name "Laika" means "barker" in Russian.
